Ingredients

  • 2 lbs potatoes
  • 1 onion
  • Roastable veggie
  • Garlic
  • Dried rosemary
  • Paprika
  • 6 bone-in chickn thighs

Directions

  1. Heat oven to 425F
  2. In large bowl, add potatoes (cut into desired size), onion (chunks), any other roastable veggie, 2 tbsp oil, >3 garlic cloves minced, pinch salt, pinch rosemary, pinch pepper
  3. Transfer to paking pan
  4. In small bowl, add paprika, salt, rosemary, and pepper to your liking
  5. Coat chicken with mixture, add on top of vegetables
  6. Cook in oven for ~35-40 minutes
